Yes. I tracked a cloud flare protected site to its data centre. Can’t exactly remember how but I just used standard tools you can find on the web. Nothing technical or special.

Yes, one of the methods used to extract a CDN’s backend off the top of my head can be improperly configured HTTPS certificate information. For instance, probing a certificate via its SHA-1 fingerprint can reveal what IP address a certificate points to, rather than the domain it would point to.
